Nutty Goji Berry Chocolate Bars
I made these yummy bars today, which will be in my new cookbook.
I was going for something with lots of flavor! Zesty, bitter, nutty, salty — totally different. Something that would freeze well so we could grab a treat when we wanted one :)
Nutty Goji Berry Chocolate Bars
Here's what I did.
I preheated an oven to 300 degrees.
I soaked:
2 cups almonds
1 cup sunflower seeds
1 cup goji berries
** I poured just boiled water over top and let everything sit for 45 minutes, then drained it well, and put it all in the food processor with the following:
1 tablespoon vanilla
5 tablespoons raw honey
zest of 1 lemon
2 tablespoons canned pumpkin puree
I combined:
2 cups unsweetened coconut flakes with 2 teaspoons celtic sea salt and 1 cup chopped raw walnuts in a big bowl and then added the nutty mix to that and mashed it round with my fingers.
I placed parchment paper in an 8x8 (9x9 would work as well) pan, and smoothed the mixture into it, nice and flat.
I then baked it for 35 minutes rotating it after 15 minutes.
I melted 1 cup shaved bittersweet chocolate in a double boiler.
When the bars were finished, I let it cool for 5 minutes, then cut squares and drizzled all the chocolate on top!
I let it cool overnight in the fridge, and it all came together all lovely-like and tasty magic!
