Healthy Comfort Food

Many of us are craving comfort food these days, especially as we're feeling cooped up, stuck inside, and/or experiencing challenging emotions that we want to "stuff" with sugary foods such as cakes, cookies, and other tempting treats.

These treats give us instant pleasure, and often lead to quick headaches, belly aches, and other undesirable effects on the physical body. 

I'd love to give you some comforting food ideas this week, where the comfort is long-lasting and not just in-the-moment!

Your taste buds will be thrilled, and your bellies will be harmonized and satiated.

Rich Vegan Chocolate Dessert Soup or Truffles!

 

Ingredients:

  • ¼ teaspoon cayenne

  • ½ teaspoon cinnamon

  • ½ teaspoon ancho chile powder (or other chile powder)

  • Zest of 1 ½  oranges

  • 1 can full-fat coconut milk

  • 1 pound 53% to 90% chocolate

  • 2 teaspoons vanilla extract

 

Directions:

1.     In a small heavy-bottomed pot, lightly toast the cayenne, cinnamon, chile powder, and orange zest on medium heat. 

2.     Add the coconut milk and bring to a just below a boil.

3.     Add the chocolate and vanilla and stir occasionally until melted.

4.     Enjoy this mixture warm, or transfer to a bowl to cool in the fridge. 

5.     If cooling, roll into truffles! Truffle toppings include cocoa powder, chopped nuts and coconut flakes!

 

 
Paleo cream sauces
 

Homemade Simple Healthy Cream Sauces

This sauce is delicious over roasted chicken, simple sautéed onions and beans, roasted tofu, roasted or grilled vegetables and grilled meats!

 

Ingredients:

  • 1 tablespoon grass-fed butter or coconut oil

  • ½ minced yellow onion 

  • 2 minced garlic cloves 

  • 1 can full-fat coconut milk or 1 ½ cups heavy cream

  • 2 cups chicken stock or ½ teaspoon each dried rosemary and thyme

  • Salt and pepper to taste

  • 1 teaspoon lemon juice


Directions:

  1. Warm the butter or coconut oil and brown the onions on medium-high heat, about 15 minutes. Add the garlic for the last minute and cook until translucent. 

  2. Add the remaining ingredients and bring to just below a boil. Reduce heat to a simmer for 10 minutes, adjust salt and lemon and enjoy.

 

 
Paleo broccoli soup
 

Creamy Roasted Broccoli Soup

 

Ingredients:

  • 2 tablespoons olive oil

  • 1 tablespoon avocado oil

  • 1 sliced yellow onion

  • 12 cups chopped broccoli (stems peeled and sliced)

  • 2 cloves minced garlic

  • 1 can coconut milk

  • 1 quart chicken or vegetables stock


Directions:

  1. Preheat oven to 400 degrees.

  2. Between 2 baking sheets, combine onion and broccoli. Drizzle vegetables with the oils, and sprinkle generously with high mineral sea salt. Rub with fingers to combine and roast until browned, about 30 minutes.

  3. Remove pans, combine contents to 1 pan and add garlic. Mix to combine. Let cool for 10 to 15 minutes.

  4. In batches, blend vegetable mixture with coconut milk and stock. Blend until very smooth. After each batch, transfer to 1 vessel, so it is easy to adjust final product. 

  5. Once complete, as desired, add lemon, salt, additional coconut milk, fresh herbs, and/or freshly ground black pepper.
