Spring Nourishment & Quick Recipes
Dear friends,
We have so much energy in the Spring, and it’s helpful to nourish our bodies with intention, so that we're able to give to the various passions that are budding.
One way of grounding and supporting ourselves is by providing ourselves and our family with a healthy set of options in the fridge to choose from each week.
Creating some intentional space to meal prep can shift your whole week!
We can ensure deep nourishment by offering our bodies a wide range of micronutrients and balanced macronutrients through real foods.
Clean proteins, vegetables, and healthy fats provide a springboard to give us the energy that we need to tackle all of the projects we're inspired to do this Spring!
Read on for some of my favorite quick recipes, and to learn more about my Nourishment Coaching Spring offerings.
Quick, Nutrient-Dense Recipes
As Spring blooms, I notice that I start to really crave vegetables!
Increasing vegetable consumption is a nutrient-dense way to up the fiber content in our diets.
Here are a couple of simple ways to creatively add simple, easy-to-find veggies into your rotation.
Feel free to reach out and write me an email if you have any questions!
10-Min Veggies & Avocado
1. Simply sear some squash.
2. Add a little chopped garlic and sprinkle of sea salt once the squash is browned.
3. Toss in greens, such as spinach or kale.
4. Add avocado to finish.
And voilà! Enjoy this delicious and nourishing combo.
Coconut Beet Soup
This would be great with flaky delicate cod, yum!
Roast your beets with a bit of water in the oven, covered, until soft, or simmering on the stove!
Blend all ingredients until very creamy:
Roasted beet
Japanese sweet potato
Coconut milk
Bone broth
Ginger, lemon, Celtic sea salt
Quick tip with this soup: Buy sliced frozen beets and toss right into the blender! A good quality blender like a Vitamix will "cook" it! Blend soup for at least 5 minutes :)
