Creamy Coconut Greens
Ingredients
3 heads of greens, such as chard, kale, collards, or spinach
1 tablespoon minced ginger
2 cloves minced garlic
1 can full-fat coconut milk
Half a lemon
Directions
Chop finely and clean a few heads of greens such as spinach, kale, collards, and chard.
Slowly sauté 1 tablespoon minced ginger in 2 tablespoons of coconut oil.
Add 2 cloves minced garlic for 1-2 minutes until translucent.
Add all the greens, 1 can coconut milk, half a can water, and a good pinch sea salt.
Stir well, pop a lid on and cook for 10-15 minutes on medium-low heat until soft and delicious, stirring occasionally.
Season with a bit of fresh lemon juice and taste for salt.
Eat this with roasted root vegetables, meats, eggs, or simply by itself!
