Creamy Coconut Greens

Ingredients

  • 3 heads of greens, such as chard, kale, collards, or spinach

  • 1 tablespoon minced ginger

  • 2 cloves minced garlic

  • 1 can full-fat coconut milk

  • Half a lemon

Directions

  1. Chop finely and clean a few heads of greens such as spinach, kale, collards, and chard.

  2. Slowly sauté 1 tablespoon minced ginger in 2 tablespoons of coconut oil.

  3. Add 2 cloves minced garlic for 1-2 minutes until translucent.

  4. Add all the greens, 1 can coconut milk, half a can water, and a good pinch sea salt.

  5. Stir well, pop a lid on and cook for 10-15 minutes on medium-low heat until soft and delicious, stirring occasionally.

  6. Season with a bit of fresh lemon juice and taste for salt.
