Simple Paleo Sushi
I’m on the sushi train lately!
We’ve been riding our new motor scooter to get sushi at least once a week, and it’s our guilty indulgence these days!
I had to find a healthier way... and a way that was easier on my wallet! I think I found it, and it’s delish!
Simple Paleo Sushi
Serves 2 to 4.
Ingredients
4 to 6 sheets untoasted dried nori seaweed, cut into 4 squares each
½ pound raw fish sliced thin across the grain such as salmon, tuna, mackerel
(Read a great article here about good fish choices for sushi, and how to prepare it to reduce health risks)A few veggies such as:
½ cup sliced radish
½ cup watercress
½ cup sliced carrots
½ cup blanched sliced snap peas or snow peas
2 to 3 sliced avocados
Toasted Sesame Oil
Thinly sliced scallion for garnish
Prepared Wasabi
Tamari (gluten-free)
2 to 4 small serving bowls to blend the tamari and wasabi
Set of chopsticks for each person
Directions
Simply arrange the fish, veggies, and avocado on a beautiful serving platter, and place the nori squares on a separate plate.
Drizzle the tuna with the sesame oil and sprinkle the scallion on top of both fish.
When ready to eat:
Blend the tamari and a bit of wasabi in your bowl
Make bites! Layer up some veggies and a couple bites of fish on top of a nori square, and drizzle with a bit of the tamari wasabi sauce. Enjoy!
