Pistachio Vinaigrette
Pistachio Vinaigrette
Add this simple vinaigrette to grilled lamb, chicken, or hearty fishes like salmon and barramundi.

Yield: 1 3/4 cup
Ingredients
3 tablespoons lemon juice
3 tablespoons red wine vinegar
1 cup extra-virgin olive oil
1/4 cup toasted chopped pistachios
2 tablespoon chopped mint
2 tablespoons chopped cilantro
high mineral sea salt and pepper to taste
Preparation
In a small bowl, combine lemon juice and red wine vinegar. Whisking constantly, drizzle the olive oil in a slow stream.
Add the pistachios, mint and cilantro. Season to taste with salt and pepper.
Note: If following a ketogenic diet, use 1/2 cup olive oil and 1/2 cup MCT oil in this recipe.
