Pistachio Vinaigrette

Pistachio Vinaigrette

Add this simple vinaigrette to grilled lamb, chicken, or hearty fishes like salmon and barramundi.

Total time: 10 minutes

Yield: 1 3/4 cup

 

Ingredients

  • 3 tablespoons lemon juice

  • 3 tablespoons red wine vinegar

  • 1 cup extra-virgin olive oil

  • 1/4 cup toasted chopped pistachios

  • 2 tablespoon chopped mint

  • 2 tablespoons chopped  cilantro

  • high mineral sea salt and pepper to taste


Preparation

  1. In a small bowl, combine lemon juice and red wine vinegar. Whisking constantly, drizzle the olive oil in a slow stream.

  2. Add the pistachios, mint and cilantro. Season to taste with salt and pepper.

 

Note: If following a ketogenic diet, use 1/2 cup olive oil and 1/2 cup MCT oil in this recipe.
