4 Healing Soups That Support Gut Health
Liquid food has been a large focus for me lately because of some health challenges I’ve been facing. Giving my gut less work seems to increase my physical energy.
In order to incorporate more liquid foods in my full life, I've been prepping blended soups in advance, and of course, I've been wanting to make them taste delicious. I thought I would share some ideas, as soups are always a nourishing addition to any meal, especially as we move into the cooler season!
Broccoli Purple Potato
I love just popping these whole purple sweet potatoes into the oven after scrubbing them. They’re a great component on their own for the week to simply cook and heat back up to eat! You can also chop them up (after cooking them) and add them into quick curries, stir-fries, etc. They have a sweet nutty flavor, and they’re quite high in vitamin C!
Blend all ingredients until very creamy:
Roasted whole purple sweet potato
Cooked broccoli
Bone broth
Grated nutmeg, lemon, Celtic sea salt
Quick tip with this soup: Grab organic frozen broccoli and toss right into the blender! A good quality blender like a vitamix will "cook" it! Blend soup for at least 5 minutes :)
Coconut Beet
This would be great with flaky delicate cod, yum! Roast your beets with a bit of water in the oven, covered, until soft, or simmering on the stove!
Blend all ingredients until very creamy:
Roasted beet
Japanese sweet potato
Coconut milk
Bone broth
Ginger, lemon, Celtic sea salt
Quick tip with this soup: Buy sliced frozen beets and toss right into the blender! A good quality blender like a Vitamix will "cook" it! Blend soup for at least 5 minutes :)
Greens and Mushroom
Earthy and hearty. This would pair well with roasted chicken or salmon.
So nice to brown the mushrooms well, and even add toasted nuts if you like!
Blend all ingredients until very creamy:
Roasted mixed mushrooms
Steamed cauliflower
Bone broth
Garlic, lemon, Celtic sea salt
Pumpkin Saffron
You could use this soup to poach shellfish in! Spinach or other sliced veggies tossed in to poach would be nice as well! Or, just drink the golden nectar.
Blend all ingredients until very creamy:
Steamed pumpkin, butternut, or other winter squash of choice
Bone broth with steeped saffron
Nutmeg, cinnamon, lemon, Celtic sea salt
